I'm more than 50% Italian and therefore thoroughly embarrassed by my answer.

I saw them use spoons in Goodfellas and Godfather, so I'm sticking with spoon.

People who cut it up are the devil. Also I once saw someone put KETCHUP on it. I fainted dead away. I've seen Goodfellas dozens of times, and yet I never put it together until it was pointed out at TOC that DeNiro's putting ketchup on his pasta when they're eating at Tommy's mom's house. Holy shit. That's the most unsettling thing he does in the entire movie. If you watch that scene again, you'll notice that he applies the ketchup not by shaking the bottle or slapping its arse, but by turning it upside down and rolling it between his palms. De Niro researched this; it's how the real life character he plays did it.

Think about that, and then think about DeNiro today.

1) This is obviously the only correct method.
And 2, I use a knife and fork, because it makes my bites mouth sized, instead of some snowballing monstrosity, and keeps most of the sauce and other sauce elements, unlike the whole 'spin everything off your noodle' method. I would say I just twirl it on the plate if I don't have a knife, but I really just use the fork to cut it.
