Liz n Dicksgiving First off, sorry for the delay in getting the recipe. I kept forgetting. Secondly, there was a disparity in recipes. I had written one down years ago, but also last year when my grandmother died, my uncle's girlfriend made laminated recipes of my grandmother's quesadilla recipe. Looking at that one, I think she just got a recipe online, and it wasn't my grandmothers, as I know for a fact that she never used parmesan cheese in hers. So, I present, 2 recipes for quesadillas. The second one is brief, but it's more just an ingredient list, rather than repeating the step by step process: Quesadilla Recipe (origins suspect)12 oz rice flour 1 cup bread flour 48 oz ricotta 1 stick melted butter 1/2 cup milk 5 eggs 3 Tbsp vegetable oil 3 cups sugar 3 Tbsp parmesan cheese 1 tsp cinnamon 1 tsp salt 1 tsp baking powder Mix eggs. Add in sugar and keep mixing. Add milk, oil, and cinnamon. Add butter and cheese and mix. In separate bowl, whisk flour, salt, and baking powder. Add to liquid mixture. Heat oven to 375 - 425 (depends on whose oven is used). Butter 7 or 8 pie plates (9") Add mixture to pie plates. Cook 4 at a time in the oven, 15-20 minutes, until golden brown on top. Quesadilla Recipe (Accurate as of 2004)12 oz rice flour 1 cup white flour 2 cups sugar 1/2 tsp cinnamon 4 eggs 1 stick butter 1 cup milk 2 Tbsp canola oil 2 lbs ricotta cheese 1lb cottage cheese 1 small container of sour cream (8oz?) pinch of salt 2 tsp baking powder Combine all. Bake at 450 for 15 minutes until evenly browned.
