I'm in the middle of a project that involves contacting the regional colleges that offer a Culinary Arts program. The homepage for the program at the largest community college in the state features an image, right at the top, of a kitchen where a woman in a chef's hat and apron is demonstrably picking her nose. Granted, it was 50 years ago, but based on the years I worked in restaurants when I was in high school, I would say that is a pretty clear case of truth in advertising. My brother waited tables at the Midwestern Steak 'n Shake chain in high school. According to him, when the bottles of Heinz ketchup were almost empty, they wouldn't throw them out. They'd instead refill them from a dispenser in the kitchen, meaning the ketchup at the bottom was an untold number of years old.

All right. I think we have a plan for Thanksgiving. Mojo braised chicken, rice, tostones. Maybe some coquito and a fun dessert. Lovely Puerto Rican feast.

Just realized I bought bone-in, skin-on thighs instead of boneless skinless, which is what I need for street cart chicken. It's fine, I can butcher them out, and I suppose there was a little cash savings there, but I really wasn't in the mood of it.
Edit: Also, dang, where was my head at while shopping? How did I make this mistake?

Just realized I bought bone-in, skin-on thighs instead of boneless skinless, which is what I need for street cart chicken. It's fine, I can butcher them out, and I suppose there was a little cash savings there, but I really wasn't in the mood of it. Right, when planned it's like fine, I'll make a broth/stock on the side and fry up some chicken skin. Accidentally bought it's like "Nooo! This substracts from my valuable time!" Surplus in the skin and bone bags though. EDIT: "Unplanned" in my case is when I have to go out of my way to get boneless skinless since it's not a thing in german supermarkets, gotta go all the way to the turkish butcher, and can't be arsed.

What I would really love is if boneless, skin-ON thighs would become a common cut here in the States. I understand you can find this regularly in Japan and some Southeast Asian countries, but you absolutely never see it here. Either the skin and bones are both there or they both aren't.
But yeah, you're right. More bones bound for the freezer.

We are supposed to get a freeze tonight, so I picked all our remaining tomatoes. Got about 2/3 of a five gallon bucket of ripe and green tomatoes. If we play our cards right, we should have fresh garden tomatoes for Christmas dinner. For Thanksgiving for sure if we don't screw up the ripening process. We shall see.
