Deep down, I'm pretty sure everyone wishes at least a little bit that they were in a band. Playing music for people is awesome! But writing songs is hard! And if your play people a song and they don't like it, that would be sad! So that's why we invented cover bands.
What songs, when you hear them, make you think "Damn, that would be a hell of a lot of fun to play live for an audience"? Here are three of mine.

I always thought it would be cool to have a cover band that only performed non-single tracks. Just as there's nothing interesting about another vampire costume at Halloween, there's nothing interesting about another cover band playing "Say It Ain't So". Short set: (It seems to take me forever to load embedded video threads, which is why I tend to stick to text-based threads on the music board.) White Stripes - Black MathStone Temple Pilots- Art School GirlThe Beatles - I Want You (She's So Heavy) Beck - Mutherfuker (obviously I could fill any list with Beck) Yeah Yeah Yeahs - TickLed Zeppelin - Immigrant Song (eh, I'll bend my rule for this one)

Playing "Say It Ain't So" seems like it would be incredibly weird, unless you actually had the same family issues with alcohol as Rivers. It would be like a non-Irish band trying to play Sunday Bloody Sunday. Almost every White Stripes song, however, would be perfect.

I'd be the lead singer with a bad case of "Lead Singer's Disease", and very, very high on a "perfect mix" of intoxicants. Power trippin' reel hard and waiting for a fight.
Dead Boys - "Ain't Nothin' To Do" Motley Crue - "Live Wire" Backyard Babies - "Rocker" AC/DC - "Dirty Deeds, Done Dirt Cheap" OFF - "Zero for Conduct" The Stooges - "Shake Appeal" W.A.S.P. - "I Wanna Be Somebody" Rose Tattoo - "Scarred For Life" Hellacopters - "Misanthropic High" Turbonegro - "Rendez-Vous with Anus" Dwarves - "Motherfucker" MC5 - "Kick Out The Jams" Motorhead - "Ace of Spades"

My old band used to work some (or all) of these into setlists. All were played in a garage punk style. I miss this.
Johnny Cash - "Folsom Prison Blues" Eddie Cochran - "Something Else" The Monkees - "Daydream Believer" Nirvana - "Territorial Pissings" Peter, Paul & Mary - "Puff the Magic Dragon" The Ramones - "I Don't Wanna Go Down To the Basement" / "Beat On The Brat" / "Sheena Is A Punk Rocker" / "Judy Is A Punk" / "Blitzkrieg Bop" (yes, we put together a medley) Frank Sinatra - "That's Life" Talking Heads - "Psycho Killer" Dr. Teeth and the Electric Mayhem - "Can You Picture That?" Dar Williams - "Iowa" The Wurzels - "I Am A Cider Drinker"

What bar are you going to that has Beck's "Sissyneck" and "Bob Dylan's 115th Dream" at the ready for karaoke night?!

I have an idea for a Simon and Garfunkle cover band, but instead of doing their material from when they were together, our set lists would be composed of Paul Simon's solo career, and Art Garfunkle's solo career.
Our name would be: Aul Simon, Part Garfunkle.

Culling from my brief experience in bands in college, my ideal cover set list would be as follows:
The Hives - "Abra Cadaver" into "Walk Idiot, Walk" The Rolling Stones - "Jumpin' Jack Flash" Television - "See No Evil" The Who - "I Can't Explain" Marvin Gaye - "Don't You Do It" Curtis Mayfield - "Fool For You" The Contours - "Do You Love Me?" The Beach Boys - "Dance Dance Dance" The Clash - "Police and Thieves" Talking Heads - "Love ----> Buildings on Fire" R.E.M. - "What's the Frequency, Kenneth?" Camper Van Beethoven - "Take the Skinheads Bowling" Pink Floyd - "Fearless" The Stooges - "Down on the Street" Captain Beefheart - "I'm Gonna Booglarize You, Baby" Screamin' Jay Hawkins - "I Put A Spell On You" The White Stripes - "Hardest Button to Button" Black Rebel Motorcycle Club - "Whatever Happened (To My Rock and Roll?)"

Funny you should mention it, but every once in a while, I imagine starting a new wave cover band using only traditional Indian instruments (tabla, harmonium, sarod, sitar, etc.) I figure I could pick up the harmonium pretty easy and enlist a friend of mine who studied tabla under Zakir Hussain. I even have arrangements worked out in my head for "Once in a Lifetime" by the Talking Heads (sped up, it could be call-and-response qawwali), "Ask" by the Smiths (like 50s Mohammad Rafi, with strings), and "Shout" by Tears for Fears (drone-y Ravi Shankar style). It wouldn't be serious, like Nouvelle Vague, just a lark among us second generation weirdos. I can't imagine who else the audience would be, but it would be fun!

So much so that I'm surprised it hasn't happened yet. Funny you mention Zakir Hussain. I've been enjoying this album called Sarangi: The Music of India by Ustad Sultan Kahn lately (part of Folkways' Mickey Hart collection), and discovered there was this group he formed with Bill Laswell called Tabla Beat Science, of which Hussain was also a part. Haven't got around to listening to them yet.
