Hey, all. So I usually make tamales at Christmas to continue my gramma's tradition, but things were too busy this year (so now I unfortunately miss out on having children around to help. Slave labor is awesome).
I'm looking for fresh ideas. Gramma treats anything but pork tamales as some kind of gringo appropriation of traditional food, and is bemused by all my other efforts. But I'm open to anything.
This year, I'm thinking:
12x pork (for tradition's sake) 12x Hatch chile and Chihuahua cheese 12x butternut squash and fig compote 12x Mexican squash, black beans and Chihuahua cheese
What else should I make? I'm thinking a variation of the chile and cheese with smoked chicken thighs.

Interesting concept! Sounds fun and creative. 1. Maybe treat it like dim sum. Use some diced shrimp or other seafood. 2. Or a summer vegetable based one, with grilled corn and summer squash.
What's the criteria on filling? I imagine it can't be a wet ingredient, right?

What's the criteria on filling? I imagine it can't be a wet ingredient, right? I like a corn-squash-zucchini-cheese idea, personally? I like the smoked chicken idea too.

I'd want something that could be frozen well (I like freezing most of the tamales and enjoying them for a few months. It's a quick and easy dinner). Maybe smoked salmon, a small amount of crema, and...dunno, something else as a sauce? Can't be all wet. Needs something solid, and with the wet as an accent.

Delicious idea. The masa already acts as a polenta substitute, so the eggplant sauce and eggplant filling would be VERY nice.

Kung pao chicken tamales. They used to have a truck here that did kung pao quesadillas and I miss them very much.
