Hey, pairesta... the Snapes went to The Blind Butcher! Course 1: Snack Sampler. House made pretzel bread served warm with house mustard, fresh potato chips served on a mountain of beer goat cheese, amazing pickle sampler with pickled carrots, cucumbers (two ways), shallots, onions, jalapenos, celery, radish and butternut squash. By the way, pickled butternut squash is incredible. Each item was individually pickled in a different brine. Beer: BrewDog Dogma Course 2: Duck Poutine. Duck fat fries topped with cheese curds, duck stock gravy, duck confit and a fried duck egg. Quite simply one of the richest, most indulgent and most delicious things I've ever had. We chose to save the dignity (and 10 bucks) and forwent the optional foie gras. Beer: Liefman's Goudenband. Course 3: Sausage Plate. This place has several rotating house made sausages on the menu daily. They even have a cold case where you can pick up raw sausages to go. The sausage plate is a random "chef's selection" of three, this time including: bacon bratwurst (good), spicy Italian (very good), and brisket jalapeno cheese (revelatory). Each served with its own garnish (mostly pickles) and some more fresh pretzel bread. A good plate, but next time I think we'll just pick one or two sausages that sound most interesting to us. Beer: Stone Ruination. You now understand why I don't post to the Selfie thread more often. You can't be making goofy faces like "smiling" and shit when you've got to concentrate on those duck fries and pretzel breads and those sausages and oh my god I need to stop thinking about all these foodstuffs that I don't get to eat. Is this gonna be another repeat of the Meddlesome Moth clusterfuck from a few months back? Fingers crossed. The one time we went was midday on a weekend. I'm not sure about the evening crowd. At least it's technically patio season (for masochists), so that opens up some seating.

Can we hijack this to serve as a general Dallas foodie thread? This month's Torchy's special is pretty terrific. I haven't gone out to eat much in the last few weeks, though. Jeebus! Bacon as the main protein?! Droooooooooooooooooool. Edit: Doh! Nope, it's fajita beef. Somehow missed the first part of the sentence. Still looks incredible. I have a Torchy's about 2 minutes from the house right now, so sadly I'll be moving away from that

My rule of thumb is, show up an hour, hour and a half before I'll be hungry, and wait it out with cocktails.

OK, I didn't want to chance it on a Friday night with out of town guests. So I made a reservation at Belly & Trumpet instead. BB is pretty high on my "to go" list still though, before we move to Houston. Probably will do a weeknight date instead. Ooo, Belly & Trumpet is one we've been wanting to try. Between the baby and me trying to save some scratch by cooking at home more, we kinda suck at getting out to the good places these days. Haven't been to a Neighborhood Services in maybe two years. Since we're doing the Dallas thing now, last night the Snapes had some of Luscher's red hots from Local Yocal in McKinney. Awesome, awesome hot dogs. Too expensive, but at least we get two meals out of an 8-pack. Holy crap the wagyu beef at that place. Pairesta, have you ever tried any of it? Ron Howard, where are you located again? As a foodie I know you'll travel all over the metroplex for the perfect bite, but generally what area do you hang?

Lived up to expectations. I need to go there early in the month when the food envelope is full. Wait a minute, it is early in the month! All of the beef looked pretty amazing, but what caught my eye was the grassfed, wagyu skirt steak. Fajitas of the Gods! I just picked up the red hots on this visit, though.

I did both and it was still "take a bite and pull the whole piece out of the tortilla" tough. Reminded me of Old Skool fajitas from when they first started. I guess they must be treated and tenderized, because when I get them elsewhere they are always much more tender.

Use skirt flank steak next time; I think it's a bit more forgiving. Flank is more forgiving, and expensive, but I guess when you're buying grassfed wagyu beef you've already justified it as a splurge anyway. I find that skirt is hit or miss. I could treat four seemingly identical pieces of skirt in the identical way, and I'd get four different levels of tenderness. It's a delicious cut, but I do have consistency issues with it that I'm not entirely willing to blame on myself.

I'm literally a five-minute walk from Nonna, under the tollway up Lemmon. Across from Mario's, a.k.a. Gloria's But Slightly Better and Slightly Cheaper. I've only lived in Dallas for a year and a half - just got to Neighborhood Services a couple months ago, wow that was a good place. I know Tim Love's The Woodshed in Ft. Worth is way high on my to-do list. As it should be. My parents insisted we all go - good call. Not all of it was great, but some definitely was. Once you have lamb brisket, it's hard to go back (especially since their beef brisket isn't top-flight). And the daily new sausages... I also remember a few tasty veggie sides.
