In brighter news, Mrs. Snape is feeling up to it, and I have reservations for Town Hearth on the 20th. (Sorry, Ron).
Even two weeks out, the available times for a Saturday night were 5:00pm and 9:30pm. It's okay though. I was aiming for an early dinner time, because I want to follow dinner with a later showing of Guardians 2 at the Drafthouse. Now if only they would post their times.
The Snapes don't do presents for each other. We'd rather just get a sitter and share an evening together. I usually do the planning though, and I'm thinking I nailed this one. (My wallet, however, disagrees.)

Grub Burger Bar
The new location in Frisco.
It was tasty enough. My VooDoo Mushroom burger came topped with turnip root chips and absinthe-sauteed mushrooms, and the mushrooms were for sure the highlight of this burger. Licorice-bitter and booze-hot, I'm not sure I've tasted anything like them. They somehow managed to be absinthe-y without also being gross. Weird, but good. The "medium well" burger was definitely well done, but aren't they always.
I can't tell this place apart from Hopdoddy, Haystack Burgers and Barley, or any of the other fast casual burger-and-craft beer joints that are all the rage. Not that I dislike them, but it lacks personality.

Town Hearth
Whoa. Now that's a good steakhouse.
The challenge here is deciding whether to go for one of those fat, shareable steaks or diversify your order to taste more items. In the end I let Mrs. Snape - and her still unreliable appetite - lead the way, and we ordered the Battle Axe, the 90-day dry aged prime rib-eye big enough to share. It was one of the best steaks I've ever had. Perfectly cooked and seasoned, melt in your mouth tender, and with a rich beefy flavor the way only dry-aged meat can deliver. It was the highlight for sure, but everything else was good: chili cheese fries, griddle cauliflower in brown butter, mac-n-cheese.
I was excited for the tots du jour, but sadly it was a seafood topping, so that was a no-go. The cauliflower was divine, though, well crusted and addicting with that nutty brown butter.
We're committed to coming back post-pregnancy so we can try the carpaccio au poivre together.

Ron Howard VoiceThis cracked me up. I grew up in East Plano, so Collin Creek Mall was very much our mall for much of my youth. When I saw the restaurant in your new review was located outside the mall, I had to look up its exact location. Here's a screenshot of the Google Map. Look at the only store Maps thought was worth mention at the mall.

Yeah, the mall's not doing too hot...the southern end where Macy's used to be now has pretty much nothing. But there's glow-in-the-dark minigolf!
What were Teen Snape's favorite mall hangouts?

Xochi. I know pairesta has said he's heard bad things, and now I have too - my friend said that his dinner food was all really good, but they sat him at this rinkydink plastic table next to the valet stand.
Except the Chronicle just praised it to the skies as the best new thing since sliced fajitas. Hmmmm

Except the Chronicle just praised it to the skies as the best new thing since sliced fajitas. Hmmmm Yeah, Cook's review almost regret not picking that for my birthday outing. But she certainly did get a little carried away there. Maybe we'll do it for my wife's. We went to The Pass instead.

The Pass is supposed to be awesome?!? Oh yeah, last year(ish) you told me to absolutely make it a special occasion meal. They recently overhauled their menu and scaled back to 5 course chef's tasting instead of 8, but you can buy "supplemental" courses that bring it back up to that number. My wife and I each added two supplements. It was a slight step down from other experiences. I remember getting served things there and laughing in sheer joy at the creativity of it. This time the food was much more straightforwards and there seemed to be more on a focus of getting you through and out. I mean, it was all still good (except dessert, featuring a puckeringly lemon granita, and one of the upsell courses promised "caviar" that was a thin line of one egg each encircling the dish), just not quite as high an experience as other times. Plus with Oxheart gone now, I was hoping they'd up their game and make the case for this kind of creative experience and instead they seem to be making themselves to similar to Provisions, their sister restaurant.

There's a new restaurant in Wylie called La Bahia Seafood & Mexican Grill. They specialize in seafood - so of course we haven't been - but when I first scoped the menu shortly after they opened I was impressed just how seafood-centric it was, with little if any traditional Tex-Mex outside of the queso appetizer. No enchiladas! No burritos! Parking lot was never very full, though. Then about a month after they opened, there was a new sign stamped in front of the building, "New! Tex-Mex Specials" and went on to advertise their enchilada platter, nachos, and on and on.

Scallop Ceviche Gulf fish (don't remember the name) ceviche Potato and Chorizo Taquitos Mole Sampler Roasted octopus Masa pancake with roasted pork rib Chocolate plate All amazing. The least-great dish was the mole sampler, which just needs to refine its execution. You get a pretty sizable bowl of mole for each sampler and only three tortillas to work with.

This makes zero sense. Brenner has burned a trail of pissed off restaurateurs through the Dallas dining scene in her tenure and never seemed quite happy here. If she resigned and moved back to California to partner on a place, that'd be much more understandable. But staying in a city she routinely scorched for its less than desirable dining scene (in her opinion)? The knives are gonna be out. Compare this to Robb Walsh, the dining critic for the Houston Press, who spent much of his time finding and promoting Houston and Texas institutions. When he resigned to partner at a Tex-Mex restaurant, it made sense, because there's no better champion of the value of Tex-Mex cuisine than him. Also this casts her recent "Dallas sucks" report in a more cynical light.

Fun fact! Culturemap's own Teresa Gubbins is blocking me on all social media for reasons unknown to me. We've had a few internet type conversations over years, and every single one has ended with her misunderstanding and misconstruing my words to mean something 100x more offensive than intended and me going ahhhh crap. So I assume she just decided I'm a monster. Ugh, this sounds like a rom-com.
