So I eat a lot of eggs. Almost every morning. The problem is I'm getting really sick of them. To spice them up and add some variety I've tried adding almost anything I can find and tossing them. I had some of these packaged spices I liked to sprinkle on them, but unfortunately as far as I can tell they're no longer being sold (I think I actually bought them on clearance after they were already discontinued). So I'm trying other stuff. Lately it's been onions and hot sauce with a little bit of sprinkled Mexican cheese. Essentially I'm looking for secret yet simple recipes to make my eggs less bland.

Indian stylee is with seared onions, salt, and a dash of cayenne pepper. I often skip the onions if I don't want to stink up the house, but red pepper is a must.

Depending on how runny you like your eggs, you can make half-assed huevos rancheros in like two minutes.
Melt butter in a skillet over medium high heat, crack eggs into it, and once the whites start to set, pour some jarred salsa over them. While the salsa heats through, warm up two corn tortillas on a plate in the microwave for about 30 seconds. When they're done, dump the contents of the skillet on top, add a shit-ton of Valentina hot sauce and enjoy.

Are you just eating eggs for the protein? Like, are you sitting down with 6 hard boiled eggs? Or are you looking for breakfast ideas that have eggs (that may or may not be considered in the slightest healthy)?
My favorite breakfast is a poached egg, avocado, and toast, with salt and pepper. If you have a sous vide machine, you can poach in the shell and keep them in the fridge for a quick morning breakfast.
You can also make a quiche or frittata and have that last for 4 breakfasts.

This is my fast and easy take on an amped up egg salad, served warm. Copy/pasting from an earlier thread:
Soft boil three large eggs. I do this by placing cold eggs in my electric kettle and covering them with cold water. I turn on the kettle and wait until the water starts boiling. The kettle will turn itself off. From that point, time out 6.5 - 8 minutes, depending on what you like. Meanwhile, in a small bowl prepare a sauce of mayonnaise, Dijon mustard, fresh dill, salt and pepper. If you don't have fresh dill, use dried. I find it works fine in this application. You don't need very much sauce.
When time is up, drain the hot water and cover the eggs with cool water just until they're safe to handle. Peel them carefully and plop them into your sauce. Cut into small pieces. Mix. If you timed it right, the yolks will still be slightly runny to augment your sauce. Serve warm on bread or toast. Miles apart from the classic lunchbox egg salad, and crazy satisfying.

Try as many different iterations of preparation as you can: scramble, bake in custard cups, fry, omelette, frittata, poached, etc. Make breakfast tacos. Roast some vegetables and put a fried egg on top.

Scrambled, with a little milk or cream and plenty of cheese gently stirred in while cooking. Add any veggies you want.
I like to saute a bunch of veggies and potatoes and put an over-easy egg on top. Or put the whole thing on a tortilla.
I make a lot of half-assed chilaquiles, too.

I love frittatas when i want to put a slight extra bit of effort without it actually being any more real effort. quick stir of the eggs, grate a cheese, dice a tomato with some basil maybe throw it in the even and yum.

My favorite variation of that morning mindless misplacement in the kitchen was a few weeks ago when one of the big chef knives went missing. And turned up stuffed, blade up, in one of the utensil canisters, put away with the other utensils that had been in the drying rack. Thank goodness the knife's absence was noticed before someone reached toward the canister for, say, the potato masher and came out missing a finger...

It's a hold-over from growing up where we put as much as possible in the fridge because of roaches.

This is so timely, I have two full cartons of eggs at home. I'm doing this tonight. Maybe this one with the wine vinegar too. Gonna have a little egg party. I have potatoes too so I need a little something simple and fantastic to do with those.

Worcestershire sauce makes everything better. Walkers has Worcestershire sauce flavoured crisps, which are my favourite.

Omelisu is a great mom/comfort food. Fry rice with chopped onion and minced carrot, and stir in a healthy amount of ketchup towards the end for a pleasant orange color. Make an egg pancake by getting a dry pan very hot, removing from heat, and immediately adding a beaten (and un-thinned) egg. Swirl the pan so the egg makes a wide, thin cake like a crepe. After a minute, the thin edges will brown and begin to lift off the pan. Peel the egg pancake back by the edges and flip it over to let it cook a bit more on the cooling pan.
Wrap the egg pancake around the fried rice burrito-style. Serve on a plate, providing still more ketchup in a squirt bottle with which to draw a happy picture on the egg.
