I have a craving to play a Final Fantasy game, I just don't know which one to go with.
FF VI is the one I've touched the least, and have always wanted to do a full playthrough.
FF VII I want to play again, because all this hype about the remake just makes me want to play ALL of it, not just midgar
FF VIII is something I want to go back to. I remember it being very iffy, with some bright spots. However, when it was released on PS4 there were a lot of FF VIII apologists, so maybe I'm the wrong one.
FF IX is the best FF game of all time, and I haven't replayed it in a while.
Tales of Vesperia because it rules.

VI is a great game and if you've never played through it in its entirety you owe it to yourself to do so. I'd do IX or VII if I'm getting second picks. Tales of Vesperia I've never played so I don't know how much it rules. VIII I replayed maybe a year or two ago due to that same, "Maybe I was wrong about this game," thought that you seem to have. My original opinion of the game was more or less correct. It's maybe not as outright awful as I thought it was back when it first came out, but it's still a bad game and easily one of the worst main series FF games.

Play VI--you love IX and VI is the game that feels the most like it, especially if you don't let every character learn magic.

Started playing FF6. If the game let me play with the magitek armor the entire time, I would have beaten it by now!

I know you already picked, but my answer still applies: all of them.
Seriously, as quickly as you got through Mass Effects 1-2, you could blow right through your whole list in a couple of weeks I bet, especially if you're playing any of them on Steam and using their fast forward options. (Really awesome with 9, because it trivializes the chocobo digging mini-game.)
FF6's auto-play and fast speed modes on Steam are pretty handy too, though I understand most people hate the art.

I'm playing 6 on the SNES Classic, I own the rest on PS4, so they have the fast forward options. The thing with Mass Effect, like legit.... I love them more than FF and find the Combat less repetitive. I know FF 6 through 9 aren't particularly long for JRPGs, but it will probably take me a month to get through just one of them. Just because I won't be able to do as big of chunks with them as I did with the ME games.

Here is a question. If I wanted to just grind and brute force my way through the game, could I do that? I know level scaling was officially started with VIII, but is there anything in VI that would combat power leveling? Like, I wouldn't mind sacrificing a few hours to just make the game a bit more of a breeze. Would just listen to podcasts while grinding.

I wouldn't recommend going too far with it though until you've acquired Espers, because whichever Esper you have equipped will grant a stat bonus to that character on level up. +1 Magic, +2 Strength, etc. You gain access to Espers about a quarter of the way into the game. And since you'll be grinding anyway, you can go one step further with it and intentionally shuffle Espers around to grant each character the ideal bonus when they level up, depending on how you're wanting to build out the team. That's how I'd play it back in the day. Magic is really powerful in FF6, so boosting magic power is probably "easier" long run than focusing on strength. There's an Esper called Zoneseek who you can get at the auction house in Jidoor, a town very near the place you first gain access to Espers. Zoneseek grants +2 Magic on level up, which is really really good. Power leveling pays dividends all along the way, too, because FF6 almost always brings in new characters at the average party level. The stronger you are, the stronger they'll already be. Edit: Also never put anything into or do anything to boost evasion, because the stat is broken. It literally does nothing. Magic evasion, however, is very powerful, because it works as both magic evasion and normal evasion.
